1 1/2 cups minced cooked chicken
1/4 cup mayonnaise; salt and pepper, to taste
seasoning (cayenne, garlic, onion powder), as desired

1/2 cup minced ham and 1 teaspoon prepared mustard.
1/2 cup crisp crumbled bacon.
1/2 cup chopped toasted almonds, 1 teaspoon curry powder.
1/2 cup chopped water chestnuts, 2 tablespoons low sodium soy sauce.
2 tablespoons minced fresh parsley and 1 teaspoon minced onion.
3 tablespoon minced celery and 1 teaspoon dried tarragon (or 1 tablespoon minced fresh tarragon).

Cocktail Sesame Wafers

1/2 pound sharp cheddar cheese -- shredded and 1 cup margarine
2 scant cups flour and 1/2 teaspoon salt
1 to 2 tsp ground red pepper
2 teaspoons sesame or caraway seeds
1 cup very finely chopped nuts

Let margarine and cheese soften, then add the remaining ingredients and mix well. Drop by teaspoonfuls onto a cookie sheet or roll into 3 logs and refrigerate until firm. Slice and bake at 350 degrees for 15 to 20 minutes or until lightly browned

Favorite Peanut Butter Fudge

2 cups sugar (half brown sugar if desired)
1/2 cup evaporated milk
2 tablespoons light corn syrup
1/4 teaspoon salt
1 teaspoon vanilla
1/2 cup peanut butter
1/2 to 1 cup chopped nuts, optional

Mix sugar, salt, syrup and milk in pan. Bring to boil slowly. Cook until small amount forms soft ball in cold water, about 234 degrees on a candy thermometer. Remove from heat, add peanut butter and vanilla. Do not stir. Cool to lukewarm then beat just until creamy, losing gloss and beginning to hold shape. Stir in nuts if used. Pour into a buttered loaf pan or 8- x 8-inch pan and cool. Cut in small squares.
